This ooey-gooey Cinnamon Roll Casserole is the perfect dish to serve a hungry brunch crowd! It's a make-ahead recipe with canned cinnamon rolls, icing, vanilla baked into a delicious french toast bake like dish (just easier)! Perfect for Easter or Mother's Day Brunch!

Total Time: 30 Minutes, Servings: 8 Servings

Ingredients :
  • 2 cans cinnamon rolls ( with icing included)
  • 6 tablespoons butter (melted)
  • 4 eggs
  • ¾ cup milk
  • 1 ½ teaspoons cinnamon
  • 1 ½ teaspoons vanilla
  • ¾ cup maple syrup
  • ½ cup powdered sugar
  • 1-2 tablespoons milk



Instructions :
  • Preheat oven to 375 degrees.
  • In a 9x13 pour the melted butter.
  • Open the cinnamon rolls and remove the icing tubs and set aside.
  • Cut each cinnamon roll into 4 pieces. Place the cinnamon roll pieces into the 9x13 pan on top of the melted butter. Using a spoon stir the cinnamon roll pieces around gently to coat with melted butter and then make the pieces are all even and spread out with none stacked on top of each other.
  • In a medium bowl whisk together the eggs, milk, cinnamon and vanilla. Pour over the cinnamon rolls.
  • Drizzle the maple syrup over the top of the cinnamon rolls.
  • Bake for 25-30 minutes or until cake tester comes out clean.
  • In a small bowl mix the powdered sugar with 1 tablespoon of milk (add additional tablespoon of milk if needed) until icing consistency. Add the icing that came with the cinnamon rolls to this mixture and mix well.
  • Ice the casserole with the icing mixture.
