Peanut Butter Easter Eggs – Deliciously thick and creamy egg-shaped peanut butter truffles that are made with crunchy peanut butter for added crunch, and coated in melted chocolate. The perfect Easter treat!

Total Time: 15 Minutes, Servings: 2 Servings

Ingredients :
  • 1 (16 ounce) package confectioners' sugar
  • 1 cup creamy peanut butter
  • 1/4 cup butter
  • 1 tablespoon milk
  • 8 (1 ounce) squares semi-sweet chocolate
  • 1 tablespoon shortening



Instructions :
  • In a mixing bowl, combine confectioners' sugar, peanut butter, butter and milk (if needed for moisture) until blended. Shape mixture into two 1/2 pound eggs or make a bunch of smaller eggs. Freeze eggs for 1 hour.
  • While the eggs are freezing, cut semi-sweet chocolate into small pieces and place in top of double boiler with shortening. Melt over medium heat, stirring frequently until smooth. Stick a long-tined fork in top of each peanut butter egg, dip it in melted chocolate to cover then drain on waxed paper. When the eggs are cooled and set, decorate the eggs to suit your fancy.
  • TIP: The peanut butter mixture is very crumbly, add the milk until you can pick up a handful, squeeze it and have it hold its shape. You might want to make them no larger than about an inch and a half long – they are VERY sweet!I A tip for shaping these eggs: use the plastic fillable Easter eggs. Open them up, press the mix down inside one half and place it on a cookie sheet in the freezer for a few minutes. Turn them over, tap on the egg and you’ll have a perfectly shaped half an egg. Remember to use eggs that open in the middle vertically, not horizontally.
